Ingredients:
- 1 tbsp olive oil
- 1 lb ground beef (or ground turkey)
- 1 small onion, diced
- 3 garlic cloves, minced
- 1 packet taco seasoning (or 2 tbsp homemade)
- 1 tsp smoked paprika
- 1 can (10 oz) Rotel (diced tomatoes with green chilies)
- 1 can (15 oz) black beans, drained
- 1 cup frozen corn
- 1 block (8 oz) cream cheese, softened
- 2 cups chicken broth
- 1 cup shredded cheddar
- Salt & pepper to taste

Instructions:
- Brown the meat: In a large soup pot, heat olive oil and cook ground beef until no longer pink. Drain excess fat.
