- Assemble: Place a small spoonful of duxelles in the center of each pastry square, top with a cube of seared beef, then fold the corners of the pastry to seal. Pinch the seams and flip seam-side down.
- Egg wash: Beat 1 egg and brush over the top of each bite.
- Bake at 400°F (200°C) for 15–18 minutes or until puffed and golden brown.
Serve warm with a dollop of Dijon or horseradish cream on the side for dipping.
