Cranberry & Turkey Stuffing Balls That Steal the Show

Every year, when December rolls around, I get nostalgic for the chaos and comfort of our family’s Christmas Eve. I’m Shaym, the cook behind SoolFood, and trust me, my plate is always overloaded with sides. One year, I tried something new: I rolled our stuffing into little flavor bombs, added turkey and cranberry, and baked them golden. The kids popped them like snacks. My brother hoarded a corner tray. Even my grandma, who rarely strays from tradition, asked for the “little orbs of joy.” That’s when I knew these Cranberry & Turkey Stuffing Balls had to be a permanent fixture at our holiday table.

Why You’ll Love These Stuffing Balls

They’re everything you crave in a Christmas side dish, savory stuffing, juicy turkey, and a burst of tart cranberry. But unlike traditional stuffing, these are crispy on the outside and soft in the middle. Plus, they’re easy to serve, make-ahead friendly, and freezer-happy.

If you’re already making Sweet Potato in the Air Fryer or Air Fryer Carrots, this is the perfect festive bite to add to your tray.

Ingredients

  • 2 cups cooked turkey, finely chopped
  • 3 cups day-old bread cubes (sourdough works great)
  • 1/2 cup dried cranberries
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 2 garlic cloves, minced
  • 1/2 tsp poultry seasoning
  • 1/4 tsp ground sage
  • 2 eggs
  • 1/2 cup chicken or turkey stock
  • Salt and pepper to taste
  • 2 tbsp olive oil or melted butter (for brushing)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a skillet over medium heat, sauté onion, celery, and garlic in olive oil until soft, about 5 minutes.
  3. In a large bowl, combine bread cubes, chopped turkey, cranberries, sautéed vegetables, and spices.
  4. Beat eggs with the stock and pour over the mixture. Toss gently until fully moistened. Let it sit for 5–10 minutes.
  5. Roll into golf ball-sized portions and place on the baking sheet.
  6. Brush with olive oil or melted butter.
  7. Bake for 25–30 minutes, turning once, until golden and hot throughout.
  8. Serve warm with a dollop of gravy or cranberry sauce.
