This one came straight out of a cold weeknight craving. I wanted something hearty, cheesy, and comforting, but with minimal prep. I had some frozen hashbrowns, leftover ground beef, and cheddar in the fridge. Thirty minutes later, the house smelled like a diner and I had a golden, bubbling casserole ready to go. My kids called it “cheesy beef lasagna without the noodles,” and they weren’t wrong.   • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 1/4 cup milk
  • 3 cups frozen hashbrowns, thawed
  • 1/2 tsp garlic powder

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, cook ground beef with onion powder, salt, and pepper until browned. Drain excess grease.
  3. In a large bowl, mix cream of mushroom soup, sour cream, 1.5 cups cheddar, milk, garlic powder, and thawed hashbrowns.
  4. Stir in cooked beef. Mix well.
  5. Spread mixture into a greased 9×13” baking dish.
  6. Sprinkle remaining 1/2 cup cheddar on top.
  7. Bake uncovered for 35 minutes or until golden and bubbly.

Tips:

  • Add chopped green onions or diced bell peppers for a veggie boost.
  • Want more crunch? Top with crushed cornflakes or crispy fried onions before baking.
