Description

Golden crispy sweet potato nests filled with creamy burrata, an elegant, easy appetizer or brunch dish.


Ingredients

2 medium sweet potatoes, peeled and shredded

1 egg white

2 tbsp olive oil

1/2 tsp salt

1/4 tsp black pepper

1/2 tsp smoked paprika (optional)

46 small burrata balls

Fresh thyme or basil for garnish

Honey or olive oil drizzle


Instructions

1. Preheat oven to 400°F (200°C) or air fryer to 375°F (190°C).

2. Peel and shred sweet potatoes; squeeze out excess moisture.

3. Toss with olive oil, salt, pepper, paprika, and egg white.

4. Press mixture into muffin tin cups to form nests.

5. Bake 20–25 minutes (or air fry 12–15 minutes) until crisp and golden.

6. Cool 5 minutes, then gently remove.

7. Place burrata in each nest; drizzle with honey or olive oil.

8. Garnish with herbs and serve immediately.

Notes

Make ahead by baking nests and assembling later.

For vegan version, use plant-based mozzarella and skip egg.

Add pesto or balsamic glaze for extra flavor.
