A Story from Shaym at SoolFood
It started with leftovers, like so many of my best recipes. One afternoon, I found a half piece of grilled flank steak, some roasted peppers, and a jar of homemade spicy mayo from a burger night. With no real plan, I toasted up a piece of our homemade sandwich bread, layered it all up, and took a bite. Magic. The bold Cajun spice, the creamy kick from the mayo, the crunch of fresh greens, it had that perfect messy, drippy goodness that demands two hands and zero distractions. Now, this Cajun steak sandwich with spicy mayo is on heavy rotation in my kitchen.
Recipe: Cajun Steak Sandwich with Spicy Mayo
Serves: 2
Prep Time: 15 mins
Cook Time: 15 mins
Ingredients:
- 1 lb flank steak (or ribeye, sirloin)
- 1 tbsp Cajun seasoning
- Salt & black pepper
- 1 tbsp olive oil
- 1 red bell pepper, sliced
- 1/2 red onion, sliced
- 2 sandwich rolls or slices of homemade sandwich bread
- Handful of lettuce or arugula
For the Spicy Mayo:
- 1/2 cup mayonnaise
- 1 tbsp hot sauce (Frank’s or similar)
- 1 tsp Dijon mustard
- 1/2 tsp garlic powder
Instructions:
- Season & Sear the Steak: Rub steak with Cajun seasoning, salt, and pepper. Heat oil in a skillet over medium-high heat. Sear steak 3-4 minutes per side or until medium-rare. Let it rest.
- Cook Veggies: In the same pan, sauté sliced peppers and onions until soft and slightly charred (5-6 mins).
- Make Spicy Mayo: Mix mayo, hot sauce, mustard, and garlic powder. Adjust to your spice level.
- Toast Bread: Lightly toast your sandwich rolls or slices of bread.
- Assemble: Spread spicy mayo on both sides of the bread. Add lettuce, peppers, onions, and thinly sliced steak. Top with more mayo if you’re feeling bold.
Tips:
- Resting the steak is key, it locks in juices.
- Want a smoky twist? Add a sprinkle of smoked paprika to your mayo.
- Serve with Air Fryer French Fries or Air Fryer Carrots for a simple side.
Why This Sandwich Works
It hits all the notes: heat, creaminess, texture, and big steak flavor. Cajun seasoning gives the meat that savory crust; the spicy mayo cools and kicks all at once. Toasted bread holds up to the juicy fillings without falling apart. It’s simple but loaded.
