Description
Creamy savory cheesecake made with caramelized onions and cheddar, rich, comforting, and perfect for parties.
Ingredients
2–3 large yellow onions, thinly sliced
3 tbsp butter
16 oz cream cheese, softened
2 large eggs
1 cup shredded sharp cheddar
1/2 cup sour cream
1/2 tsp salt
1/4 tsp black pepper
1 tsp fresh thyme
1 1/2 cups crushed butter crackers (optional crust)
1/4 cup melted butter (for crust)
Instructions
1. Preheat oven to 350°F (175°C). Line a springform pan.
2. Caramelize onions in butter over low heat 25–30 minutes until golden.
3. Mix crushed crackers with melted butter and press into pan; bake 10 minutes.
4. Beat cream cheese until smooth. Add eggs, sour cream, cheddar, salt, pepper, and thyme.
5. Fold in caramelized onions. Pour into crust.
6. Bake at 325°F (165°C) for 40–45 minutes until just set.
7. Cool completely, then chill 4 hours before slicing.
8. Top with extra caramelized onions and herbs to serve.
Notes
Use Gruyère or Havarti instead of cheddar for variation.
Make ahead and chill overnight for best flavor.
Serve warm or room temperature as an appetizer or brunch dish.
