Creamy baked potatoes stuffed with tender chicken, steamed broccoli, and melted cheddar. These Cheesy Broccoli Chicken Baked Potatoes are cozy, easy, and full of flavor.
Ingredients
4 large russet potatoes
2 cups cooked chicken, shredded
2 cups broccoli florets, steamed
1 1/2 cups shredded cheddar cheese
1/2 cup sour cream
1/4 cup milk
1 tbsp butter
Salt and pepper to taste
1/2 tsp garlic powder (optional)
Chopped green onions for garnish
Instructions
1. Preheat oven to 400°F (200°C). Scrub and poke potatoes; bake 45–50 minutes until tender. Cool slightly.
2. Combine chicken, broccoli, half the cheese, sour cream, milk, butter, and seasonings in a bowl.
3. Slice potatoes in half lengthwise; scoop out most of the flesh and add to the mixture. Stir to combine.
4. Spoon filling back into potato shells, top with remaining cheese, and bake 10–12 minutes until bubbly and golden.
5. Top with green onions and serve warm.
Notes
Use rotisserie chicken for quick prep.
Steam broccoli lightly for the best texture.
Make ahead and reheat in the oven before serving.
Top with crispy bacon bits for extra flavor.
