Description
A creamy and cheesy baked casserole made with tender chicken, golden potatoes, and melted cheddar. This Cheesy Chicken Potato Casserole is hearty, simple, and perfect for family dinners.
Ingredients
3 cups cooked chicken, shredded or cubed
4 medium potatoes, peeled and diced
1 1/2 cups shredded cheddar cheese
1/2 cup sour cream
1/2 cup milk
2 tbsp butter
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1 tbsp olive oil
Chopped green onions or parsley for garnish
Instructions
1. Preheat oven to 375°F (190°C). Boil diced potatoes for 8–10 minutes until slightly tender. Drain and set aside.
2. In a skillet, heat olive oil and butter. Add onion and garlic; sauté until golden.
3. In a bowl, combine potatoes, chicken, half the cheese, sour cream, milk, and sautéed onion mixture. Season with salt, pepper, and paprika.
4. Spread evenly into a greased 9×13-inch baking dish. Top with remaining cheese.
5. Bake uncovered for 25–30 minutes until bubbly and golden brown.
6. Cool slightly, garnish with green onions or parsley, and serve warm.
Notes
Use precooked or rotisserie chicken for convenience.
Add vegetables like broccoli or spinach for color.
Assemble ahead and refrigerate until ready to bake.
Reheats well for lunch the next day.
