Description
A hearty, cheesy casserole with golden potatoes, seasoned taco beef, and melted cheese, a cozy family dinner full of Tex-Mex flavor.
Ingredients
1 lb ground beef (or turkey)
1 packet taco seasoning
4 cups diced potatoes
1 tbsp olive oil
1 small onion, chopped
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 cup sour cream
1/2 cup salsa
Salt & pepper to taste
Green onions, diced tomatoes, or jalapeños for topping
Instructions
1. Preheat oven to 400°F (200°C). Grease a baking dish.
2. Cook potatoes in olive oil until golden and tender. Set aside.
3. Brown beef and onions in skillet. Drain fat.
4. Stir in taco seasoning and water; simmer 2–3 minutes.
5. Add salsa and sour cream; mix well.
6. Layer potatoes in baking dish. Top with taco mixture.
7. Sprinkle cheeses on top.
8. Bake 15–20 minutes until cheese is melted and bubbly.
9. Garnish with toppings and serve warm.
Notes
Make ahead for easy dinners. Add crushed tortilla chips on top before baking for crunch.
