Description

A rich and creamy cheesecake layered with silky chocolate ganache and topped with glossy chocolate-dipped strawberries. Perfect for celebrations or cozy nights in.


Ingredients

1 ½ cups chocolate cookie crumbs

¼ cup sugar

6 tbsp unsalted butter, melted

3 (8 oz) packages cream cheese, softened

1 cup sugar

1 cup semi-sweet chocolate chips, melted

¼ cup cocoa powder

¾ cup sour cream

3 large eggs

1 tsp vanilla extract

½ cup heavy cream

1 cup semi-sweet chocolate chips (for ganache)

68 large fresh strawberries

½ cup melted chocolate (for dipping)


Instructions

1. Preheat oven to 325°F (160°C) and grease a 9-inch springform pan.

2. Combine cookie crumbs, sugar, and butter. Press into pan and bake for 10 minutes.

3. Beat cream cheese and sugar until smooth. Add cocoa, melted chocolate, and sour cream. Mix well.

4. Add eggs one at a time, then vanilla. Pour over crust.

5. Bake 50–55 minutes until edges set and center slightly jiggles.

6. Cool in oven with door open for 1 hour, then chill for at least 4 hours.

7. Heat cream, pour over chocolate chips, and stir until smooth for ganache.

8. Spread ganache over chilled cheesecake and decorate with chocolate-dipped strawberries.

Notes

Let the cheesecake chill overnight for the best texture. Use room-temperature cream cheese for a smooth batter. For a beautiful finish, drizzle with extra chocolate before serving.
