Description
Rich and moist Chocolate Strawberry Valentine Cupcakes filled with real strawberries and topped with silky ganache or strawberry frosting. Simple, romantic, and perfect for Valentine’s Day.
Ingredients
FOR THE CUPCAKES:
1 1/2 cups all-purpose flour
1/2 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter, melted
1/4 cup vegetable oil
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/2 cup buttermilk
1/2 cup hot coffee or water
FOR THE STRAWBERRY FILLING:
1 cup chopped fresh strawberries
2 tbsp sugar
1 tsp lemon juice
FOR THE FROSTING OR GANACHE:
4 oz dark chocolate, chopped
1/2 cup heavy cream
OR
1/2 cup butter, 2 cups powdered sugar, 2 tbsp strawberry puree
Instructions
1. Preheat oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners.
2. Simmer strawberries, sugar, and lemon juice for 10 minutes until thick. Cool completely.
3. Whisk flour, cocoa, baking soda, and salt in a bowl.
4. In another bowl, combine melted butter, oil, sugar, eggs, vanilla, buttermilk, and coffee. Mix until smooth.
5. Add dry ingredients and stir just until combined.
6. Divide batter evenly among liners and bake 18–20 minutes. Cool completely.
7. Cut a small hole in each cupcake and fill with strawberry filling.
8. Frost with chocolate ganache or strawberry buttercream.
Notes
Use natural strawberry puree for pink frosting without food dye.
Cupcakes can be made a day in advance and frosted when ready.
Store in the refrigerator for up to 3 days; bring to room temperature before serving.
