These Christmas Cherry Cheesecake Bars are a festive twist on a classic dessert. They feature a buttery graham cracker crust, creamy cheesecake filling, and a glossy cherry topping, making them perfect for holiday gatherings and dessert trays.
Ingredients
For the crust:
1 1/2 cups graham cracker crumbs
1/3 cup granulated sugar
6 tbsp unsalted butter, melted
For the cheesecake layer:
16 oz cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/2 cup sour cream
For the topping:
1 can (21 oz) cherry pie filling
Optional: powdered sugar for dusting
Instructions
1. Preheat oven to 325°F (163°C). Line a 9×13-inch baking dish with parchment paper.
2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press evenly into the bottom of the pan and bake for 10 minutes. Let cool slightly.
3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream until combined.
4. Pour the cheesecake batter over the crust and spread evenly.
5. Bake for 30–35 minutes or until the center is set but slightly jiggly.
6. Cool completely, then spread cherry pie filling evenly over the top.
7. Refrigerate for at least 4 hours or overnight before slicing into bars.
8. Dust with powdered sugar before serving, if desired.
Notes
Use full-fat cream cheese for the best texture.
Try other toppings like blueberry or strawberry for variety.
