Description
A creamy, flavorful Brazilian Coconut Chicken recipe made with coconut milk, lime, and garlic, an easy, tropical-inspired family dinner ready in 30 minutes.
Ingredients
1 ½ lbs boneless, skinless chicken thighs or breasts
1 can (13.5 oz) full-fat coconut milk
2 cloves garlic, minced
1 small onion, finely chopped
1 tablespoon olive oil
½ teaspoon paprika
Juice of 1 lime
Salt and black pepper to taste
¼ cup chopped cilantro (optional)
Cooked jasmine rice, for serving
Instructions
1. Heat olive oil in a skillet over medium heat. Add onion and garlic; sauté until golden and fragrant.
2. Add chicken and season with salt, pepper, and paprika. Brown both sides lightly.
3. Pour in coconut milk and lower the heat. Simmer for 10–12 minutes until the sauce slightly thickens.
4. Stir in lime juice and half of the cilantro. Taste and adjust seasoning.
5. Serve warm over rice, topped with remaining cilantro and lime wedges.
Notes
For a spicy version, add red pepper flakes or sliced chili.
Use chicken thighs for extra tenderness.
Pairs perfectly with coconut rice or roasted vegetables.
Store leftovers up to 3 days; flavor improves overnight.
