Description
Cheesy, crispy broccoli and potato bites, oven-baked and packed with flavor. A kid-friendly vegetarian snack or side dish.
Ingredients
2 cups broccoli florets, finely chopped
2 medium potatoes, boiled and mashed
1 cup shredded cheddar cheese
1 small onion, finely diced (optional)
2 garlic cloves, minced
2 eggs, lightly beaten
1/2 cup breadcrumbs (plus extra for coating)
2 tablespoons olive oil (plus extra for brushing)
Salt and pepper to taste
Optional: fresh parsley or thyme, chopped
Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet.
2. In a large bowl, mash potatoes and add chopped broccoli, cheese, onion, garlic, eggs, breadcrumbs, salt, and pepper. Mix well.
3. Shape into balls or small patties using 1–2 tablespoons of mixture each.
4. Roll each bite in extra breadcrumbs for a crispy crust.
5. Arrange on the baking sheet and brush lightly with olive oil.
6. Bake for 20–25 minutes, flipping halfway through, until golden brown.
7. Remove from oven and let cool slightly. Serve with dip or enjoy as-is.
Notes
You can prepare the bites in advance and reheat them in an air fryer.
Try adding paprika or crushed red pepper for a spicy twist.
Great served with yogurt-based dips, ranch, or ketchup.
