Description
A rich and luxurious Ferrero Rocher Pistachio Cake layered with pistachio sponge, chocolate ganache, and hazelnut crunch. The perfect holiday dessert that tastes as golden as it looks.
Ingredients
2 cups all-purpose flour
1/2 cup almond flour
3/4 cup finely ground pistachios
2 tsp baking powder
1/2 tsp salt
1 cup unsalted butter, softened
1/4 cup neutral oil
1 1/2 cups sugar
3 large eggs
1 tsp vanilla extract
1/2 cup milk
1/2 cup sour cream
1 cup dark chocolate, chopped
1 cup heavy cream
8 Ferrero Rocher chocolates, chopped
1/3 cup chopped pistachios
1/3 cup chopped hazelnuts
Instructions
1. Preheat oven to 350°F (175°C). Grease and line two 8-inch cake pans.
2. Cream butter, oil, and sugar until fluffy. Add eggs one at a time, then vanilla.
3. Whisk flours, ground pistachios, baking powder, and salt in a separate bowl.
4. Alternate adding dry mix and milk to the wet ingredients. Stir in sour cream.
5. Divide batter into pans and bake 25–30 minutes or until set. Cool completely.
6. Heat heavy cream until steaming, pour over chopped chocolate, and whisk smooth.
7. Layer cakes with ganache and chopped Ferrero Rocher pieces. Frost top and sides.
8. Decorate with crushed pistachios, hazelnuts, and whole Ferrero Rochers.
Notes
Refrigerate for 1 hour before slicing for clean layers.
Store in the fridge up to 5 days or freeze for 2 months.
Serve chilled for best texture and flavor.
