Description
French Apple Cider Chicken (Chicken Normandy), tender chicken simmered in creamy apple cider sauce with apples and thyme.
Ingredients
4 bone-in, skin-on chicken thighs
Salt and pepper to taste
1 tbsp olive oil
1 tbsp butter
1 shallot, finely chopped
2 garlic cloves, minced
1 cup apple cider
½ cup chicken broth
½ cup heavy cream
1 tbsp Dijon mustard
1 apple, thinly sliced
2 tsp fresh thyme or 1 tsp dried
Fresh thyme or parsley for garnish
Instructions
1. Season chicken with salt and pepper. Heat oil and butter in a skillet and sear chicken until golden, about 6–7 minutes per side.
2. Remove chicken and sauté shallot and garlic in the same pan.
3. Deglaze with apple cider and broth, scraping up brown bits.
4. Add apples and thyme; return chicken and simmer 20–25 minutes until cooked.
5. Remove chicken, stir in mustard and cream. Reduce sauce for 5 minutes.
6. Return chicken, coat with sauce, and serve warm with garnish.
Notes
Use hard cider for richer flavor or regular cider for a milder version.
Let sauce thicken naturally before serving.
Serve with mashed potatoes, rice, or crusty bread.
