Description

Soft, fluffy Valentine’s Day Funfetti Cake filled with pink and red sprinkles and topped with creamy frosting, an easy, festive dessert for any celebration.


Ingredients

2 1/2 cups all-purpose flour

2 1/2 tsp baking powder

1/2 tsp salt

1/2 cup unsalted butter, melted

1/4 cup oil

1 1/4 cups sugar

3 eggs

1 tbsp vanilla extract

1 cup milk or buttermilk

1/2 cup pink and red sprinkles

Frosting:

1 cup butter, softened

3 cups powdered sugar

1 tsp vanilla extract

2 tbsp milk

Pink food coloring (optional)


Instructions

1. Preheat oven to 350°F (175°C) and grease a 9×13-inch pan.

2. Whisk flour, baking powder, and salt.

3. In a large bowl, whisk melted butter, oil, sugar, eggs, and vanilla until smooth.

4. Add milk and dry ingredients alternately until combined.

5. Fold in sprinkles gently.

6. Pour batter into pan and bake 25–30 minutes.

7. Cool completely.

8. Beat butter, sugar, vanilla, and milk for frosting until fluffy.

9. Tint frosting pink and spread over cake.

10. Top with extra sprinkles.

Notes

Use jimmies-style sprinkles, nonpareils may bleed.

Add almond extract for a bakery-style flavor.

Store covered at room temperature up to 3 days.
