Description
Crispy Garlic Herb Chicken paired with golden Honey-Roasted Carrots. A one-pan dinner packed with buttery garlic flavor and natural sweetness.
Ingredients
4 bone-in chicken thighs (or breasts)
6 large carrots, peeled and sliced thick
3 tbsp melted butter
2 tbsp olive oil
3 cloves garlic, minced
2 tbsp honey
1 tbsp chopped fresh thyme
1 tbsp chopped rosemary
1 tbsp chopped parsley
1 tsp salt
1/2 tsp black pepper
1 tbsp lemon juice
Instructions
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
2. Mix butter, olive oil, garlic, thyme, and rosemary in a bowl.
3. Brush chicken generously with the garlic-herb butter.
4. Toss carrots in honey, olive oil, salt, pepper, and herbs.
5. Arrange chicken and carrots on a single baking sheet.
6. Roast for 25–30 minutes until chicken is golden and carrots are caramelized.
7. Drizzle with lemon juice and top with fresh parsley.
Notes
Serve warm with mashed potatoes or rice.
Store leftovers for up to 4 days. Reheat at 350°F to crisp the chicken.
