Description
Creamy, tangy savory cheesecake made with gorgonzola and cream cheese, an elegant appetizer or brunch centerpiece.
Ingredients
1 1/2 cups crushed butter crackers or walnuts
1/4 cup melted butter
16 oz cream cheese, softened
5 oz Gorgonzola cheese, crumbled
2 large eggs
1/2 cup sour cream
1 tbsp honey
1/4 tsp black pepper
1 tsp fresh thyme leaves
Instructions
1. Preheat oven to 325°F (165°C) and prepare a 9-inch springform pan.
2. Mix crackers and butter; press into pan and bake 10 minutes.
3. Beat cream cheese until smooth, then add Gorgonzola and mix until combined.
4. Add eggs, sour cream, honey, pepper, and thyme. Blend gently.
5. Pour mixture over crust and smooth top.
6. Bake 35–40 minutes until set with slight wobble in center.
7. Cool completely, then chill 4 hours or overnight.
8. Drizzle with honey and garnish with thyme before serving.
Notes
Use Gorgonzola Dolce for milder flavor or Piccante for stronger.
Top with figs, grapes, or caramelized onions for variation.
Serve warm or room temperature with crackers or bread.
