Description

Juicy Greek Chicken Meatballs with homemade tzatziki sauce, a light, healthy, and flavorful Mediterranean dinner ready in 30 minutes.


Ingredients

1 lb ground chicken

1 egg, lightly beaten

½ cup breadcrumbs

2 cloves garlic, minced

1 tbsp parsley, chopped

1 tsp oregano

Zest of 1 lemon

1 tbsp olive oil

Salt and pepper to taste

1 cup Greek yogurt

½ cucumber, grated and drained

1 garlic clove, minced

1 tbsp olive oil

Juice of ½ lemon

1 tbsp dill or parsley

Salt and pepper to taste


Instructions

1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment.

2. Combine chicken, egg, breadcrumbs, garlic, herbs, lemon zest, olive oil, salt, and pepper. Mix gently.

3. Form into 1-inch meatballs and bake for 18–20 minutes until golden.

4. Meanwhile, make tzatziki by mixing yogurt, cucumber, garlic, lemon juice, olive oil, dill, salt, and pepper.

5. Serve meatballs warm with a generous spoon of tzatziki.

Notes

For crispier meatballs, air fry at 390°F for 12–14 minutes.

Add chili flakes for a spicy twist.

Serve in pita wraps or over rice for a full meal.
