Description

Juicy grilled shrimp paired with a spicy-sweet mango lime coulis. Fresh, fast, and flavor-packed for summer dinners or show-off appetizers.


Ingredients

1/2 lb shrimp, peeled and deveined

1 ripe mango, peeled and chopped

1 lime (zest and juice)

1 Fresno chili or jalapeño, chopped

1 tbsp honey or agave

2 tbsp olive oil, divided

Salt and pepper to taste

Fresh cilantro or mint (optional)


Instructions

1. Add mango, lime juice and zest, chili, honey, 1 tbsp olive oil, and a pinch of salt to blender. Blend until smooth. Taste and adjust spice/sweet.

2. Toss shrimp with 1 tbsp olive oil, salt, pepper, and lime zest.

3. Heat grill or grill pan to high. Grill shrimp for 1–2 minutes per side until lightly charred and pink.

4. Plate with a swirl of mango lime coulis. Top with grilled shrimp and herbs if using.

5. Serve warm or room temperature.

Notes

Use frozen mango if fresh isn’t available, thaw first.

Make coulis up to 4 days ahead.

Coulis also works great with grilled chicken or tofu.

Double the batch and use leftovers as salad dressing or sandwich sauce.
