  • 1 lb lean ground turkey or chicken
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 (24 oz) jar of marinara sauce (no added sugar)
  • 1 (15 oz) can diced tomatoes
  • 4 cups low-sodium chicken broth
  • 1 tbsp Italian seasoning
  • 1 tsp dried basil
  • ½ tsp red pepper flakes (optional)
  • Salt & pepper to taste
  • 6 lasagna noodles, broken into chunks
  • 1 cup part-skim ricotta cheese
  • 1 cup shredded mozzarella

🕒 Instructions

Step 1: Brown the ground turkey and onion in a skillet over medium heat until cooked through. Add garlic and sauté for another minute.

Step 2: Transfer the mixture to your slow cooker. Add marinara, diced tomatoes, broth, Italian seasoning, basil, red pepper flakes, salt, and pepper. Stir well.

Step 3: Cover and cook on low for 6–7 hours or high for 3–4 hours.

Step 4: About 30 minutes before serving, stir in the broken lasagna noodles. Cover and cook until noodles are tender.

Step 5: Just before serving, dollop ricotta cheese into bowls and ladle the soup over it. Top with shredded mozzarella and a sprinkle of fresh basil or parsley.
