It started one chilly October evening. I (Shaym here!) had every intention of making classic lasagna, but between a busy workday and an overflowing laundry basket, the idea of layering noodles and preheating the oven felt like a hard pass. So, I grabbed my slow cooker, tossed in a few essentials, and hoped for magic. What came out hours later? Pure comfort. Rich tomato flavor, hearty lean ground turkey, melty cheese, and all without dirtying a stack of pans. Since then, this healthy slow cooker lasagna soup has become my go-to when I want dinner to basically cook itself.
