Classic Esquites (Mexican Corn in a Cup)

Ingredients

  • 2 cups corn kernels

  • 2 tbsp Mexican crema (or mayo)

  • 1 tbsp crumbled cotija cheese

  • 1 tsp chili powder

  • Juice of 1 lime

  • Salt to taste


Instructions

  • Boil or sauté the corn until tender.

  • Mix with crema, lime juice, salt, and chili powder.

 

  • Serve in a cup and sprinkle with cotija on top.

Notes

Great served warm or chilled. Garnish with extra lime wedges.
