Ingredients

2 cups corn kernels

2 tbsp Mexican crema (or mayo)

1 tbsp crumbled cotija cheese

1 tsp chili powder

Juice of 1 lime

Salt to taste
Instructions

Boil or sauté the corn until tender.

Mix with crema, lime juice, salt, and chili powder.

Serve in a cup and sprinkle with cotija on top.
Notes
Great served warm or chilled. Garnish with extra lime wedges.
