Description
Juicy Mediterranean Chicken Tenders marinated in lemon, olive oil, garlic, and herbs, a quick, healthy, and flavorful weeknight dinner.
Ingredients
1 ½ lbs chicken tenders
2 tbsp olive oil
Juice and zest of 1 lemon
2 cloves garlic, minced
1 tsp dried oregano
½ tsp paprika
¼ tsp red pepper flakes (optional)
Salt and black pepper to taste
1 tbsp fresh parsley, chopped
Instructions
1. Whisk together olive oil, lemon juice, zest, garlic, oregano, paprika, and seasoning.
2. Add chicken tenders and marinate 15 minutes (or up to 4 hours).
3. Heat skillet or air fryer; cook chicken until golden and cooked through.
4. Rest for 5 minutes, garnish with parsley and a squeeze of lemon.
5. Serve with rice, pita, or tzatziki.
Notes
Air fry at 390°F for 10–12 minutes for extra crisp edges.
Pair with roasted vegetables or couscous.
Store leftovers up to 3 days; reheat gently in skillet or microwave.
