Description
Mini heart-shaped cheesecakes with pink swirls and buttery crust, perfect for Galentine’s Day.
Ingredients
8 oz cream cheese, softened
1/4 cup sugar
1 egg
1 tsp vanilla extract
6 graham crackers, crushed
3 tbsp melted butter
Pink gel food coloring
Whipped cream and strawberries for garnish
Instructions
1. Preheat oven to 325°F (160°C).
2. Mix graham cracker crumbs and melted butter; press into heart molds.
3. Beat cream cheese and sugar until smooth.
4. Add egg and vanilla; blend until creamy.
5. Tint a small portion of batter pink.
6. Layer plain batter first, then add pink batter and swirl gently.
7. Bake 16–18 minutes until centers are just set.
8. Cool, then refrigerate 2 hours before decorating with whipped cream.
Notes
Can be made up to 3 days ahead.
Freeze without toppings for up to 2 months.
Use red coloring or strawberry extract for variation.
