A simple one-pan dinner of tender chicken, roasted vegetables, and golden Parmesan cheese. This One-Pan Parmesan Chicken & Veggies recipe is quick, healthy, and full of flavor.
Ingredients
2 large chicken breasts, sliced thin
1 cup cherry tomatoes, halved
1 cup broccoli florets
1 cup zucchini or bell peppers, chopped
2 tbsp olive oil
1 tsp garlic powder
1/2 tsp paprika
Salt and pepper to taste
1/2 cup grated Parmesan cheese
2 tbsp breadcrumbs (optional)
Fresh parsley or basil for garnish
Instructions
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Toss chicken with olive oil, garlic powder, paprika, salt, and pepper.
3. Arrange chicken and vegetables on the baking sheet. Drizzle with olive oil and sprinkle half the Parmesan.
4. Bake 20–25 minutes, flipping chicken halfway through. In the last 5 minutes, sprinkle remaining Parmesan and breadcrumbs.
5. Garnish with parsley or basil and serve warm.
Notes
Slice ingredients evenly for best results.
Add extra cheese in the final minutes for a crispy top.
