Ingredients
8 slices soft white or brioche bread
4 oz cream cheese, softened
1/4 cup sugar (divided)
1/2 cup fresh or frozen raspberries (thawed if frozen)
2 large eggs
1/2 cup milk or half-and-half
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon (optional)
2 tablespoons butter (for cooking)
1/4 cup powdered sugar (for topping)
Maple syrup or honey, for serving
Instructions
1. In a small bowl, mix softened cream cheese with 1 tablespoon of sugar and vanilla until smooth.
2. Add mashed raspberries and stir until combined; set aside.
3. Trim crusts from bread slices. Spread a spoonful of raspberry cream cheese filling over one side and roll up tightly.
4. In a shallow bowl, whisk eggs, milk, remaining sugar, and cinnamon (if using).
5. Dip each filled roll into the egg mixture, coating evenly but not soaking.
6. Melt butter in a large skillet over medium heat. Cook rolls in batches, turning occasionally, until golden on all sides (about 2–3 minutes per side).
7. Remove from skillet and roll in cinnamon sugar or dust with powdered sugar.
8. Serve warm with maple syrup, honey, or extra raspberries.
