Description
Soft and chewy Raspberry White Chocolate Blondies made with brown sugar, melted butter, and fresh raspberries. A simple, one-bowl dessert that’s perfect for brunch or gifting.
Ingredients
1/2 cup unsalted butter, melted
1 cup brown sugar
1 large egg
1 tsp vanilla extract
1 cup all-purpose flour
1/4 tsp salt
3/4 cup white chocolate chips
3/4 cup fresh or frozen raspberries
Instructions
1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
2. In a large bowl, whisk together melted butter and brown sugar until smooth.
3. Add egg and vanilla, whisking until combined.
4. Stir in flour and salt until no dry spots remain.
5. Fold in most of the white chocolate and raspberries, saving a few for the top.
6. Spread batter evenly in the pan and top with remaining chocolate and berries.
7. Bake 25–28 minutes, until edges are golden and center is just set.
8. Cool completely before slicing into squares.
Notes
For best texture, do not overbake, center should look slightly soft.
Use frozen raspberries straight from the freezer.
Store covered at room temperature for up to 3 days or refrigerate for 5.
Freeze up to 2 months in an airtight container.
