Description

Elegant roasted beet and pear stacks layered with creamy blue cheese and drizzled with balsamic glaze.


Ingredients

4 medium beets, trimmed

2 ripe pears, thinly sliced

3 oz blue cheese, crumbled

2 tbsp olive oil

Salt and pepper to taste

1/3 cup balsamic vinegar

1 tsp honey (optional)

Fresh thyme or basil for garnish


Instructions

1. Preheat oven to 400°F (200°C) and line a baking sheet.

2. Trim and wash beets; wrap in foil with olive oil and salt.

3. Roast 40–45 minutes until tender. Cool, peel, and slice into rounds.

4. Simmer balsamic vinegar and honey until reduced by half; cool.

5. Slice pears thinly and drizzle with lemon juice.

6. Assemble towers by alternating beet, blue cheese, and pear slices.

7. Drizzle with balsamic glaze and sprinkle with herbs.

8. Serve warm or at room temperature.

Notes

Roast beets ahead for easy assembly.

Use golden beets for color contrast.

Store balsamic glaze refrigerated for up to 2 weeks.
