Description

Savory Garlic Soy Noodles tossed in sesame garlic sauce and topped with jammy eggs, quick, cozy, and full of umami comfort.


Ingredients

8 oz noodles (ramen or udon)

4 cloves garlic, minced

2 tbsp soy sauce

1 tbsp dark soy sauce (optional)

1 tsp sesame oil

1 tsp brown sugar

2 eggs

2 scallions, chopped

Sesame seeds, for garnish

Oil for cooking


Instructions

1. Boil noodles until tender, drain, and toss with a little oil.

2. Bring water to a gentle boil and cook eggs for 6½ minutes, then transfer to ice bath.

3. Peel eggs once cool.

4. In a skillet, heat oil on low, add garlic, and cook until fragrant.

5. Add soy sauces, sesame oil, and brown sugar; stir for 30 seconds.

6. Add noodles and toss until coated.

7. Serve topped with halved jammy eggs, scallions, and sesame seeds.

Notes

Use low heat for garlic to avoid bitterness.

Reheat noodles with a splash of water for best texture.

Add chili oil for a spicy version.
