Description
Smash burger tacos combine crispy beef, melted cheese, and golden tortillas for a quick high-protein breakfast ready in just 15 minutes.
Ingredients
1 pound ground beef (80/20 fat percentage)
1 teaspoon kosher salt
10 cracks fresh black pepper
6 six-inch flour tortillas
6 slices provolone or muenster cheese
Shredded lettuce
Chopped white onions
Dill pickle chips
Burger sauce:
1/2 cup mayonnaise
1 teaspoon paprika
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1 teaspoon mustard
2 tablespoons minced bread & butter pickles
1 tablespoon pickle brine
10 cracks fresh black pepper
1/4 teaspoon Worcestershire sauce
Instructions
1. Whisk all burger sauce ingredients in a bowl and refrigerate until ready to use.
2. Divide the ground beef into 2 ½ ounce balls and season with salt and pepper.
3. Preheat a griddle or skillet over high heat until smoking hot.
4. Place beef balls on the hot surface, top with a tortilla, and press down firmly to flatten the beef.
5. Cook for 2-3 minutes until the beef forms a crispy crust.
6. Flip the taco so the tortilla crisps, then top with cheese and let it melt.
7. Remove from heat, add burger sauce and toppings, then serve immediately.
Notes
For a healthier version, use ground turkey and whole-grain tortillas.
Top with a fried egg for an extra protein boost.
Use a burger press for best results, but a flat spatula works in a pinch.
