Description

Elegant no-bake dessert made with white chocolate mousse, fresh raspberries, and ladyfingers, perfect for winter or Valentine celebrations.


Ingredients

2428 ladyfingers

8 oz white chocolate, chopped

1 1/4 cups heavy cream, divided

4 oz cream cheese or mascarpone

1 tsp vanilla extract

1 1/2 tsp gelatin

1/4 cup sugar

1 cup raspberries (fresh or frozen)

Powdered sugar and extra berries for garnish


Instructions

1. Line an 8-inch springform pan with parchment and ladyfingers.

2. Sprinkle gelatin over 2 tbsp cold water; let sit 5 minutes.

3. Heat 1/2 cup cream and sugar until warm; add gelatin to dissolve.

4. Pour over chopped white chocolate; stir until smooth.

5. Beat cream cheese and vanilla; blend in melted chocolate mixture.

6. Whip remaining cream to soft peaks; fold gently into mousse.

7. Spread half mousse over ladyfingers, add raspberries, then top with remaining mousse.

8. Smooth surface, cover, and chill at least 4 hours or overnight.

9. Dust with powdered sugar and decorate with berries before serving.

Notes

For a snowy finish, dust just before serving.

Use high-quality white chocolate for the smoothest texture.

Best served chilled and sliced with a warm knife.
