Sweet Potato Fondant with Smoked Almond Cream

Description

Golden sweet potato fondants served with silky smoked almond cream, elegant, flavorful, and comforting.


Ingredients

2 large sweet potatoes

2 tbsp butter

1 cup vegetable or chicken stock

2 garlic cloves, smashed

1 sprig fresh thyme

1/3 cup smoked almonds

1/2 cup heavy cream (or coconut cream)

1 tsp lemon juice

Salt and pepper to taste


Instructions

1. Preheat oven to 375°F (190°C).

2. Peel and slice sweet potatoes into 1 1/2-inch rounds.

3. Sear in butter 3–4 minutes per side until golden.

4. Add garlic, thyme, and stock halfway up the sides.

5. Bake 25–30 minutes until tender.

6. Blend smoked almonds, cream, lemon juice, and salt until smooth.

7. Plate fondants over almond cream; drizzle with pan butter and sprinkle with crushed almonds.

Notes

For vegan version, use olive oil and coconut cream.

Add smoked paprika for extra flavor.

Make ahead and reheat in oven before serving.
