Description
Moist strawberry cake with creamy white chocolate frosting and pink drizzle, perfect for Valentine’s Day.
Ingredients
2 1/2 cups all-purpose flour
1 tbsp baking powder
1/2 tsp salt
3/4 cup unsalted butter, softened
1 1/2 cups sugar
3 eggs
1 cup diced strawberries
3/4 cup milk or buttermilk
1 tsp vanilla extract
Few drops pink food coloring
White Chocolate Frosting:
1 cup white chocolate chips
3/4 cup butter, softened
2 cups powdered sugar
1 tsp vanilla extract
Instructions
1. Preheat oven to 350°F (175°C). Grease and line two 8-inch cake pans.
2. Whisk flour, baking powder, and salt in a bowl.
3. Cream butter and sugar until light and fluffy.
4. Add eggs and vanilla; mix well.
5. Fold in strawberries and coloring.
6. Alternate adding dry ingredients and milk; mix until combined.
7. Divide batter into pans and bake 25–30 minutes.
8. Cool completely before frosting.
9. Melt white chocolate and cool slightly.
10. Beat butter and sugar, then add melted chocolate for frosting.
11. Assemble cake, frost, and drizzle with pink-tinted chocolate.
Notes
Use fresh or thawed strawberries.
Chill frosted cake for clean slices.
Freeze unfrosted layers for up to 2 months.
