  • 4 large flour tortillas
  • 1 cup shredded cheddar or American cheese
  • 1 tbsp butter or oil for the skillet
  • Salt & pepper to taste
  • ½ tsp garlic powder

  • ½ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp finely diced pickles or relish
  • 1 tsp pickle juice
  • ¼ tsp garlic powder

Optional toppings:

  • Shredded lettuce
  • Tomato slices
  • Extra pickles

Instructions

  1. Make the sauce: Mix mayonnaise, ketchup, mustard, pickles, pickle juice, and garlic powder. Chill until ready to use.
  2. Cook the beef: Heat a large skillet over medium-high heat. Add ground beef, season with salt, pepper, and garlic powder. Cook until browned and crispy bits form. Remove from heat.
  3. Assemble the quesadillas: Spread a thin layer of burger sauce on one side of each tortilla. Add cheese, cooked beef, and a little more cheese on top. Fold in half.
  4. Cook the quesadillas: Wipe out the skillet, melt butter, and cook each quesadilla for 2–3 minutes per side until golden brown and crispy.
  5. Serve: Slice into wedges, drizzle with extra sauce, and top with lettuce or tomato if desired.
