Growing up, we had two weekend rituals in our house. Saturday cartoons and cinnamon rolls. My mom used to make the dough from scratch, and while they were amazing, I’ll admit: I’m not always up for a full yeast-dough project at 7am. That’s where these apple pie cinnamon rolls come in. They capture all the sweet, spiced comfort of both desserts in one ridiculously cozy bite, and they’re way easier to pull off than you’d think.
These rolls start with a soft, buttery dough (you can use homemade or a shortcut like crescent roll sheets). The filling? Warm cinnamon apples that taste like the inside of a fresh-baked pie. Rolled up and baked until golden, they’re drizzled with a creamy glaze and best enjoyed warm from the oven with a big cup of coffee.
What makes these apple pie cinnamon rolls a favorite in my fall rotation is the flavor payoff for so little effort. The cinnamon sugar caramelizes as they bake, and the apples stay tender but not mushy. You could serve them as a holiday brunch option, an easy Thanksgiving morning treat, or even as a fun twist on dessert.
I recently added these to my fall brunch spread with my Banana Chocolate Chip Cookies and a batch of Air Fryer Carrots to round things out. The contrast of sweet and savory worked like a charm, and no surprise. These rolls were the first to vanish.
They also make your kitchen smell incredible. Like, burn-a-candle-and-it-still-won’t-compare levels of good.
If you’re looking for a new favorite fall breakfast (or dessert), these apple pie cinnamon rolls are it. They’re rustic, cozy, and made to be shared, even if you’re just sharing with yourself.
Apple Pie Cinnamon Rolls Recipe
Prep Time: 25 minutes
Cook Time: 25 minutes
Yields: 9 large rolls
Ingredients
For the dough
- 1 package crescent roll dough sheet (or use homemade dough)
For the apple filling
- 2 medium apples, peeled and finely chopped (Granny Smith or Honeycrisp work well)
- 2 tbsp unsalted butter
- 1/3 cup brown sugar
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1 tsp cornstarch
- 1 tsp lemon juice
- Pinch of salt
For the glaze
- 1/2 cup powdered sugar
- 1 tbsp milk or cream
- 1/4 tsp vanilla extract
Instructions
- Preheat oven to 375°F (190°C). Lightly grease an 8×8-inch baking dish.
- Make the apple pie filling: In a skillet, melt butter over medium heat. Add chopped apples, brown sugar, cinnamon, nutmeg, lemon juice, and salt. Cook for 5–7 minutes until apples soften. Stir in cornstarch and cook another minute to thicken. Remove from heat and let cool.
- Assemble the rolls: Unroll the crescent dough on a lightly floured surface. Spread the apple filling evenly over the dough, leaving a small border.
- Roll and slice: Starting from the long side, roll the dough into a log. Slice into 9 equal pieces and place in the prepared baking dish.
- Bake for 22–25 minutes, or until golden brown and bubbly.
- Glaze: In a small bowl, whisk together powdered sugar, vanilla, and milk. Drizzle over warm rolls and serve immediately.
These apple pie cinnamon rolls are buttery, perfectly spiced, and full of gooey apple goodness. Whether for a fall brunch or a sweet after-dinner bite, they’ll make your kitchen smell amazing and your guests feel right at home.
