Description

Creamy blackberry and pistachio dessert bars with buttery crust and marbled filling, simple, elegant, and full of color.


Ingredients

1 1/2 cups almond flour

1/3 cup melted butter

1/4 cup granulated sugar or sweetener

8 oz cream cheese, softened

1 egg

1/4 cup sugar

1/2 tsp vanilla extract

1 cup blackberries (fresh or frozen)

1 tbsp lemon zest

1/3 cup crushed pistachios


Instructions

1. Preheat oven to 350°F and line 8×8 pan with parchment.

2. Mix almond flour, butter, and sweetener; press into pan. Bake 10–12 minutes until golden.

3. Mash blackberries with sugar and lemon zest; set aside.

4. Whisk cream cheese, egg, vanilla, and sugar until smooth.

5. Spread cream mixture over crust. Add blackberry dollops and swirl gently.

6. Sprinkle pistachios over top.

7. Bake 20–25 minutes until set. Cool and refrigerate before slicing.

Notes

Use room-temperature cream cheese for a smooth texture.

Do not over-swirl; distinct color layers look best.

Chill fully before cutting for neat slices.
