Description
These gooey hot cocoa cookies feature a rich chocolate base and a golden toasted marshmallow topping, your next favorite winter bake.
Ingredients
1/2 cup unsalted butter, melted
1/2 cup brown sugar
1/4 cup white sugar
1 egg + 1 egg yolk
1 tsp vanilla extract
1/3 cup unsweetened cocoa powder
3/4 cup all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
3/4 cup chocolate chips
1 cup mini marshmallows
Instructions
1. Preheat oven to 350°F. Line baking sheets with parchment.
2. In a bowl, whisk melted butter and both sugars until glossy.
3. Add egg, yolk, and vanilla; mix until smooth.
4. Sift in cocoa, flour, baking soda, and salt. Stir to combine.
5. Fold in chocolate chips.
6. Scoop dough onto trays. Bake 8–9 mins.
7. Press marshmallows into hot cookies.
8. Return to oven for 2 more mins or broil briefly.
9. Cool on tray for 10 minutes before serving.
Notes
Torch the marshmallows after baking for a campfire effect.
Add peppermint extract or espresso powder for a twist.
Freeze dough balls for future cookie cravings.
