Description

Mac and Cheese Cowboy Cups are creamy, smoky, cheesy, and portable. Muffin-tin magic packed with BBQ beef and baked mac with crispy edges.


Ingredients

2 cups elbow macaroni

1/2 lb ground beef

1/3 cup BBQ sauce

1 1/2 cups sharp cheddar cheese, shredded

1 egg

1/4 cup milk

Salt + pepper to taste

Optional: jalapeños, green onions, crushed chips


Instructions

1. Cook macaroni until just shy of al dente. Drain.

2. Mix pasta with egg, milk, salt, pepper, and half the cheese.

3. Brown beef in skillet. Drain fat and stir in BBQ sauce. Simmer until thick.

4. Grease muffin tin well. Spoon mac mix into each cup.

5. Top each with BBQ beef and extra cheese.

6. Bake at 375°F for 15–18 minutes until edges are crisp.

7. Cool 5 minutes before removing from tin.

8. Serve warm or at room temp.

Notes

Add-ins like jalapeños or crushed chips bring texture.

Use pepper jack or smoked gouda for cheese swap.

Store in fridge up to 4 days or freeze 2 months.
