There’s something magical about the way pillowy gnocchi soaks up the basil-infused tomato broth. It’s hearty, fresh, and comes together in under 30 minutes. Best part? Just one pot and zero stress.
Ingredients
- 1 tbsp olive oil
- 1 small yellow onion, diced
- 3 garlic cloves, minced
- 1 can (28 oz) crushed tomatoes
- 3 cups vegetable broth
- 1 tsp sugar (optional, to cut acidity)
- 1/2 cup heavy cream or coconut cream
- 1/3 cup chopped fresh basil (plus more for topping)
- Salt and pepper to taste
- 1 package (16 oz) potato gnocchi
- 1/2 cup grated parmesan (optional but recommended)
Instructions
- Sauté the base. In a large soup pot, heat olive oil over medium heat. Add diced onion and garlic, cooking until translucent and fragrant, about 5 minutes.
- Add tomatoes and broth. Pour in crushed tomatoes and vegetable broth. Stir, then bring to a gentle boil. If desired, add 1 tsp sugar to mellow out the acidity.
- Simmer with basil. Reduce to a simmer and stir in fresh basil, salt, and pepper. Let it simmer uncovered for 10–15 minutes so the flavors develop.
- Cook the gnocchi. Stir in the gnocchi and cook until they float to the surface, about 3–4 minutes.
- Cream it up. Lower the heat and add the heavy cream and parmesan. Stir gently and let it simmer for another 2–3 minutes. Taste and adjust seasonings.
- Serve hot. Ladle into bowls, garnish with extra basil, and serve with crusty bread.
