- 4 cups vegetable broth
- 1/2 cup grated parmesan (plus extra to serve)
- 1 cup baby spinach (or kale)
- 1 package (16 oz) potato gnocchi
- 1/2 cup heavy cream (or coconut milk for dairy-free)
Instructions
- Sauté the aromatics. Heat olive oil in a large pot over medium. Add onion and garlic and cook until fragrant and softened, about 4-5 minutes.
- Build the base. Stir in thyme, chili flakes, salt, and pepper. Add the white beans and broth. Bring to a gentle simmer.
- Add the gnocchi. Toss in the gnocchi and cook for 5-6 minutes or until they float and soften.
- Creamy and cheesy. Stir in heavy cream, parmesan, and spinach. Let it cook for another 5 minutes until the cheese is melted and greens wilt.
- Finish and serve. Taste and adjust seasonings. Serve hot with a sprinkle of parmesan on top.
